Marinade RecipesOriental BBQ Marinade2/3 c Thinly sliced green onions 1/2 c Soy sauce 1/2 c Water 1/4 c Oriental dark roasted sesame oil 2 1/2 tb Packed brown sugar 1 1/2 tb Toasted sesame seeds, crushed 1 tb Minced garlic 1 tb Grated fresh ginger root 1/2 ts Ground red pepper 1/8 ts Freshly ground Szechwan peppercorns Fresh red chili peppers Combine sliced green onions, soy sauce, water, sesame oil, brown sugar, sesame seeds, garlic, ginger, red pepper and Szechwan peppercorns. Place meat and marinade in plastic bag or utility dish, turning to coat. Close bag securely or cover dish; marinate in refrigerator 4 to 6 hours, turning occasionally. Remove meat from marinade; reserve marinade. Place meat on grid over medium coals. Broil 5 to 6 minutes. Turn meat over; brush or spoon on marinade 1 time. Cover; continue cooking 5 to 6 minutes or until desired degree of cooking. Place meat on platter; garnish with chili peppers and spring onions. Tangy BBQ Marinade2 tb Oil 1 c Onions, chopped 1 1/4 c ketchup 3/4 c Water 1/4 c Worcestershire sauce 1/4 c Vinegar 2 tb Brown sugar 2 ts Salt Mix oil, onions, ketchup, water, Worcestershire Sauce, Vinegar, brown sugar and salt. Place meat and marinade in plastic bag or utility dish, turning to coat. Close bag securely or cover dish; marinate in refrigerator 4 to 6 hours, turning occasionally. Remove meat from marinade; reserve marinade. Place meat on a rack in a foil-lined roasting pan; bake in preheated 450'F. oven until browned, about 20 minutes. Sweet & Sour Marinade3/4 c Unbleached All-purpose Flour 2 ts Seasoned Salt 1 ts Pepper 1/2 c Cooking Oil 2 c Sliced Onion 1 1/2 c Hot Water 8 ea Heaping T Dark Brown Sugar 1/3 c ketchup 1/4 c Red Wine Vinegar 2 ea Cloves Garlic, Minced 2 ea Large Bay Leaves 1. Combine flour, seasoned salt and pepper; meat. Brown meat in oil on all sides. Remove meat from pan. Add onions and cook until golden brown. Place meat on top of onions. Combine water, brown sugar, ketchup, vinegar, garlic and bay leaves; pour over meat. Cover and bake in moderate oven (350 degrees F. ) 2 1/2 hours. Remove bay leaves before serving. |
